My Greatest Accomplishment!


My very first cupcakes! YAY! I couldn't wait to blog about these delicious coconut cupcakes. I made them last night and it's my very first time baking cupcakes. I've always been intimidated by baking because I haven't been very successful in my previous numerous attempts. I tried baking bread, and then brownies and failed both times. Then I tried baking cookies – it didn't go well but it was less catastrophic. So, I gave up baking until a couple days ago, I suddenly got the urge to bake.

My biggest obstacle is when it comes to cooking and baking I don't like to follow recipes, I prefer creating my own; unfortunately, when I try to bake something, it never fails to disappoint me. I thought I should try again and challenge myself to follow a recipe (What a crazy idea!). Sadly, I failed to follow the recipe but I succeeded and surpassed all expectations – the cupcakes were amazing! By the way, I found the recipe from 52 Cupcakes blog and altered it a bit.

Here's my version:

Coconut Cupcakes

3/4 cup shredded coconut
1 1/4 cup unsweetened coconut milk
1 egg
3 egg whites
1/2 cup flax meal
2 1/4 cake flour
1/2 teaspoon salt
1 1/2 tablespoon baking powder
8 oz unsalted butter
1/2 cup sugar

(Check 52 cupcakes for instructions)

And for the frosting:

2 sticks of butter
2 1/2 cups powdered sugar
1/3 cup coconut milk
1 1/2 teaspoon lemon extract
1/8 teaspoon salt
1 1/2 cup sweetened shredded coconut

Beat together until light and fluffy.

I know that my baking adventures are not over yet but this time I am going to keep going. I hope to have more success in baking as much as cooking – I do love both art and science.
